Traditional soda Loaf

Great moist soda bread, good at any time of the day


Ingredients

  • 560g Plain White Flour
  • 2tspn bread soda
  • 2tspn baking powder
  • 1tspn salt
  • 75g wheatgerm
  • 50g dark brown sugar
  • 75g Bran
  • 340g wholemeal (half course/half fine)
  • 50g mixed seeds
  • 1 L buttermilk
  • 3tspn sunflower oil

Directions

  1. Sieve flour with the salt, baking soda & baking powder into a suitable large bowl
  2. Blend the sugar with the buttermilk
  3. Mix the rest of the dry ingredients together
  4. Make a well in the centre of the mix, blend in the buttermilk and sugar and mix with a wooden spoon, bringing the ingredients together to make a soft, slightly wet, dough – it should drop from a spoon
  5. If needed,add a little more milk to achieve the right consistency
  6. Place in two x 2lb loaf tin that have been lined with parchment
  7. Bake in pre-heated oven 150 C fan/ gas 3 for 1-3/4 hours. it should sound hollow whten the base is tapped, leave to cool on wire rack.
