We weren’t so lucky with our plum tree this year. I had to give it a hard prune because it was reaching over to our chicken run, Fortunately, one of our friends had a glut on their farm—the branches were practically dropping to the ground with the weight.
Ruthie made Plum ketchup
Perfect for chilly autumn and winter meals, alternative mango chutney for Curries, great with cheeses, just about anything that needs a hit of tangy sweetness with hints of spice
Ingredients

Directions
1. Get someone to stone the plums, say for instance your kids if you have any, but in this case Ruth did all the hard work 😭
2. Lash everything into a large pot, simmer gently for 30 minutes to allow the sugar to dissolve.
3. Remove the bag of tied up spices, allow the plum mixture to cool slightly, then puree in batches using a high speed blender-if you like it really smooth pass the contents as well.
4. Return to pot with the spices and continue to simmer, with lid off until the ketchup has reduced, approx. 1 ½ – 2 hours, keep an eye on it and stir occasionally to prevent sticking.
5. Place into sterilized jars or bottles of your choice while they are still warm and seal.
Lash, Irish slang for giving it a go
